If I use two cans do I use both the yeast and do u need fermentable
 
At least the 2 yeasts, better still, 2 other specialty yeast and nothing extra not if you don't want to.. Assuming ~20l
 
I've become very fond of doing this with two cans of Coopers Dark Ale or two cans of Coopers Pale Ale.

I use both sachets of yeast, and let them ferment out for a fortnight.

Works a treat for me, and I like the increased bitterness.

I have done it with Coopers Stout, and that's about as bitter as I would like.
