Underletting - How To?

I like the sound of underletting and want to give it a go on my next batch. I am all gravity, with a 10gal rubbermaid and phil's 12". I can easily hook up the HLT to the false bottom. Do I need to control the inlet flow rate? I am guessing yes. Do I just admit the correct amount of strike water and then stir?

i underlet.

Basically i dont control th eflow rate.
I open up the ballvalve on the HLT Fully and open the Mash tun Ball Valve fully open and then underlet into the Mash Tun.
I measure the amount of water coming out of the HLT - typicaaly 30ltrs.

I stir just to even out the temp in the mash - yet to find a dough ball this way.

Underletting is possible with or without a pump.
Your aiming to get the liquor in as quickly as possible so don't restrict the flow.
