Hi all.
I am planning a Coopers Toucan, because I want to use up the can of Larger and the Brew Enhancer #1 that came with my Coopers kit. As luck would have it my local supermarket had new stock of Coopers extract, and it was on special today! $8.something for a can of stout with a best before of Jan 2013! The freshest one they had. The Larger can from my kit isn't bad either, with a best by of Dec. 2012.
The plan - dissolve the brew enhancer and add the 2 cans of goop to 4-5 litres of hot water, stir it all up until mixed, top up to 23 liotres, cool to 18 - 20c and add yeast.
My questions:
1) Should I add both packets of yeast? Planning to use the stuff that came with the cans.
1.5) Would I be lots better off buying some safale s-04 and using that instead?
2) Do I need a "blow off tube"? Reasons I ask are: My "Coopers" fermentor has a "Krausen Kollar" but no hole for an airlock. With the "Kollar" in place I will have quite substantial headroom. My other FV has a screwtop that simply doesn't seal, doesn't even come close, so I use glad wrap with that one. Can't really see glad wrap and a blow off tube working, unless perhaps I drill through the very top of the FV and run tube through there. (Actually, I just though of that while typing this, could be the go).
3) Should I mix the 3.4kg (2 cans) of goop and the 1kg of BE#1 all together at the start and let it rip? Or maybe just the 2 cans, make up to 21 litres, then as fermentation starts to slow after a few days add the BE#1 dissolved in cooled boiled water? Or do the BE#1 and one can, then add 2nd can after couplefew days?

just do this, with both yeasts. Add them at 20-25deg then cool to 18.
those new coopers fermenters have heaps of headroom so you probably don't have to worry about a blow off tube if you keep the temp under 20deg.

+1 The new fermenters are specially designed to contain the krusen, even if it does reach the lid it should not dislodge it, nor escape from the fermenter. The huge krusen on my toucan stout (made up with around 1.5kg of extra fermentables) didn't even get anywhere near the lid.

All sounds OK - wHat are you trying to make? Some kind of porter type brew?

S04 wouldn't be a bad idea but if using kit yeast, definitely use both.

Otherwise I'd keep it pretty simple and just mix and add. No need for a blow off (the brewing kind: the carnivale type is always welcome).

OK, all done. In the fridge @ 18c. OG was 1.058
Not sure what I've made. I hope it will be porterish.
Hoping the bitterness in the stout goop will be enough.
Is it a Stager, or a Lout?
Time will tell I suppose. :)
