Brewer's Notes
My xmas in July 2007 offering. Honey added at 5 mins. Brewed first week in May when we had a hot snap ambient temp around 21-22 for the first 3 days so fermenting temp probably higher. Banana flavours and some higher alcohols present with this yeast at those temps so pull back the temp if you want a 'clean' ale. FWH with a high alpha dual purpose, slightly harsh bitterness, if I brewed again I would stick with normal hopping regime and maybe up the aroma hops a tad. Yeast was a Coopers Pale Ale from long neck, from large starter. Under sparged hence the low efficiency, wanted to retain the high FG and couldn't fit any more grain in the mash tun. Finishing gravity was actually 1016 giving alc of 6.1% (can't work out how to edit recipe) Enjoy!
