Koch Hefe Weizen

Brewer's Notes

This is my best Weizens yet, cloudy and great fluffy white head, and easy to brew in about 10 days chill and drink early.It is pale but not as pale as this image is showing! If you like wheat beer try this one, every visitor likes this one on tap. Pitch the 1.5L yeast starter at 22c, ferment at 18c for 3 days and increase to 24c to finish.Enjoy.

2.25 kg Powells Pilsner (Powells Malts)
0.75 kg Weyermann Carapils(Carafoam)
0.16 kg Weyermann Melanoidin

20 g Hallertauer Hersbrucker (Pellet, 4.0AA%, 5mins)
20 g Nelson Sauvin (Pellet, 12.7AA%, 0mins)
15 g Northern Brewer (Pellet, 8.5AA%, 60mins)

Yeast

1500 ml Wyeast Labs 3333 - German Wheat

Misc

2 tsp Yeast Nutrient
22L Batch Size

  • Original Gravity 1.066 (calc)
  • Final Gravity 1.018 (calc)
  • Bitterness 14.9 IBU
  • Efficiency 75%
  • Alcohol 6.24%
  • Colour 8 EBC

im all geed up after the white labs talk and i have some wlp300 that im keen to use, what was the mash schedule for this?

what would the effect of using ale malt rather than pilsner malt be?

Sorry :( only just found this post. do you have Beersmith? If so I will email you the recipies I have done.

First few times I did it was: Step Temp
40 min Step C 52.0 C
60 min Step C 68.3 C
40 min Step C 75.0 C

But have found this the best:
Step Time Name Description Step Temp
30 min Step 52.0 C
60 min Step 66.0 C
20 min Step 77.0 C
As for Ale malt , I have not used it in this beer, used Pilsner [with the wheat :rolleyes: which is a given duh :p ] in the early ones but have been using Weyermann Vienna which has been great.

Wyeast 3333 is my yeast of choice
