I keep my water filter refrigerated between brews. At the moment it's in my chesty and somehow fell off the hump a little while ago, breaking the bottom floor:

The freezer is still working ok, but I am wondering if I should do something about it to prevent condensation leaks and maybe keep it's insulation up to scratch. I have considered some wet area bathroom sealant, that expanding foam stuff, or just some plumbers tape.

Any suggestions as to what's the best course of action?

Any type of sealant of filler that is rated for the temps inside the freezer including curing time.
Whatever you use be mindful of the fumes it might give off when curing, you don't want the fumes contaminating the contents.
A neutral cure rated silicone could be a thought if your worried about it sticking to anything while it cures put a piece of glad wrap over it.
