This marinade is great for BBQ prawns, scallops or any seafood, but I've only used it on prawns.
150mL olive oil
1 lemon
3 sprigs dill
3 tbs sweet chili sauce
1 dash balsamic vinegar
2 cloves garlic
salt & pepper to taste
Place the juice and zest of one lemon into a large bowl. Add in the chopped garlic clove, chopped sprigs of dill, balsamic vinegar and the sweet chili sauce. Whisk in olive oil and add the salt & pepper. Add the prawns or seafood to the marinade and toss and allow to stand in the fridge for at least 2 hours. Cook the seafood on a hot grill plate with the marinade.
This marinade recipe is only a guide as you can really add or subtract any ingredients of your liking. The main point being you should always retain the oil and lemon juice as the base.
