I love tapenade but am rather tired of buying crap tapenade so I finally put together a recipe of my own.

Love to see what your recipes are for tapenade!

[SIZE=16pt]Tapenade[/SIZE]


[SIZE=medium]350g pitted kalamata olives[/SIZE]
[SIZE=medium]3 – 4 anchovies – chopped (start with 3 and add another if you feel it needs it)[/SIZE]
[SIZE=medium]3 medium sized cloves of garlic – crushed[/SIZE]
[SIZE=medium]2 tablespoons of salted capers – rinsed and dried[/SIZE]
[SIZE=medium]1 tablespoon of lemon thyme[/SIZE]
[SIZE=medium]2 tablespoons of sherry vinegar[/SIZE]
[SIZE=medium]3 tablespoons of olive oil[/SIZE]

[SIZE=medium]Put everything into a food processor and blitz until it is a paste.[/SIZE]

[SIZE=medium]Makes approx 2 cups[/SIZE]

[SIZE=medium]Keep in an air tight jar in the fridge for about 7 or so days. [/SIZE]
 
I love a good tapenade - I'll try this, as I grow about half the ingredients myself and can scab some lemon thyme from a mate.

I have a container of kalamata's soaking with some chillies in brine
I have anchovies
I have olive oil
I have thyme
I have garlic

you have to have capers....tapenade isn't tapenade without capers!

Tapenade is a Provençal dish consisting of puréed or finely chopped olives, capers, anchovies and olive oil. Its name comes from the Provençal word for capers, tapenas. Wikipedia
 
MMMm salty goodness. Love olives and anchovies...
