Stout Recipe

1 can Coopers Stout
500g Light Dry Malt Extract
1kg Dark Dry Malt Extract
250g Dry Corn Syrup
250g Raw Sugar
150g Golden Syrup
About 250g of Morgan's Roasted Dark Malt Syrup (Dark LME)
175g Lindt '85% Cocoa' chocolate
20g Nescafe Alta Rica Instant Coffee
5g Salt
18g POR Hop Pellets -Dry hopped (Not sure about whether to dry hop or to boil it with the rest of the junk
2 Pkt Safale - 04
Making up to 23L approx
Pitching at 18 degrees

NOT USING MY ARM!

Boiling all of the ingredients above the hops for 20 mins, good/bad?
Also wondering if anybody has a guess as to the final ABV? I'm expecting a shit load, thats why im using 2 packs of yeast.

I reckon with all the malt you'll end up with a fairly sweet stout

Maybe the chocolate will balance it out - not sure

I'd be inclined to boil the hops with all the ingredients (except the kit) to get some bitterness

Maybe with just the malt extract initially and add the other ingredients later in the boil

I'd throw the chocolate + coffee in toward the end of the boil

Not sure what the salt is for

I just did this one (well similar) yesterday myself - except with 750g each of the Light and Dark ME. I also used 200g of Lindt 85%, and steeped 50g of roast barley.

I used fuggle hops and boiled 12.5g for about 45 mins, then added the last half and boiled them for 5 mins or so (I think). I added the salt, coffee and chocolate towards the end of the boil.

I used 1 x 11gm SA-04 packet and hopefully by the time I get home it will be bubbling away happily.

Tasted sweet, but stouty last night when I tasted the OG sample, but not really that much sweeter than normal wort. However the roasted barley may have helped to bitter things up a little bit...

so my boil schedule is now the hops (i think its only 12 g i got, its one of those teabag ones) and the 1.5kg of assorted malt extract at the start (20 mins), and the rest of the stuff at around 10 except for the choc and coffee, which is at 5 mins.

does that sound good?

If it`s only a 12g. hop teabag you`re using with all those fermentables, I don`t see it doing much hopwise. I doubt you`d notice it in amongst all that malt choc. and coffee.

60g golding of fuggles Hop Pellets - 20 @ 20, 20 @ 10 and 20 @ 1

Boiling the hops with 500gm of extract. the rest will be added after the boil.

If you must use Gold.Syrup, use "Lyle`s", imported from UK.
$1.99 for 454g. tin, Aldi and some Coles.
No comparison to Aust. stuff.
