hello

Just tried a Mt Macedon pale Ale made by Holgate Brewhouse. It was fantastic. Would anyone out there have a recipe similar to it. I have JW pale malt and crystal at home and willing to buy others grains if needed. But what other grains would i need? Also they mention on their website they use a London ale yeast (easily obtainable) and "generous additions of zesty american aroma hops". So what are these zesty american hops and how can i generate the hop profile for this beer.

To new to help much with this. But from google

They have a little list of hops that might be an interesting read.

Had a look at a little info that I do have and cascade is supposed to be spicy. floral, citrus aroma.

Others with more hop experience will probably have a better idea.
 
I'd like to know what hops they use too - but for their yeast you can just reculture from the bottle!

I'd be surprised if the hops weren't Cascade. This beer's been around for quite a while, since before a lot of these other new-fangled US varieties became available. They could have changed varieties since, but I can't see why they would. Probably bitter with PoR.
 
I had lunch at the Holgate brew pub in Woodend a few weeks ago and went on a quick tour of the brewery. The lady who showed us the brewery and served our beers told me that the flavour/aroma hop in the Mt Macedon Ale is Cascade.

OG: 1042
EBC: 10.6
IBU: 26.8
FG: 1008
ABV: 4.7 (Bottle Carbed @ 2.4vols)

Grains

4300 Grams - Joe White / MaltCraft Vienna Malt (6-10ebc)
100 Grams - Joe White / MaltCraft CaraMalt (50ebc)

Hop Schedule

@60 Mins - 15g Nelson Sauvin (12.0%AA, 13.5 IBU)

@15 Mins - 8g Nelson Sauvin (12.0%AA, 5.4 IBU)
- 8g Amarillo Gold (8.5%AA, 3.8IBU)

@5 Mins - 10g Citra (12.0%AA, 2.7 IBU)
- 8g Amarillo Gold (8.5%AA, 1.5 IBU)

Dry Hop: for 3 Days after Fermentation has slowed
- 5g Amarillo (8.5%AA)
- 5g Citra (12.0%AA)

Mash: @ 65c for 60 Mins
Mash out: @ 74c for 10 mins
Batch Sparge: at 74c

Yeast: Safale S-04 Dried English Yeast
 
Maybe up the IBU to 30 and try and get your hands on one of those London Ale yeasts.
It's a great beer, been a favourite of mine for ages...
