I recently scored some JS Porter for cheap the other day and really enjoyed the smokey, dry, chocolate malt flavour this beer has.
Id like to make something similiar in extract or AG.
Chocolate malt grains really stand out as an aroma and flavor in this beer.
Can someone please tell me how this is done without adding too much to the bulk and colour of the beer?
Is unfermented extracted grains added post fermentation or something?
 
hi mate,

i recelty brewed a porter with the js in mind. i ended up with the following, maybe a little darker and more chocolate flavour than the original but still a cracker. any pointers or mods would be appreciated.

I first tasted this beer at least 2yrs ago and fell in love with the complex flavours, every Porter that I've attempted to make since, and even the JS porters that I've tried since just haven't met the match. As I recall nothing really stands out it just all melds together very well. Probably the yeast is a big factor in this.
Ryans recipe looks OK. I think the base is right, but maybe rather than all the spec malts, some medium crystal and some choc malt. I like Munich in a beer, so it's not a bad additon. Just guessing really, but sometimes the best beers come from a real simple malt bill.
 
Heard or read somewhere that the roast flavour in JS Porter comes from roasted wheat. Probably why most attempts to nail the clone fail.
