So after a bit of a layoff i've knocked out some new brews:

1. Dr Smurto's Golden Ale
2. GeoVel - (George's Duvel Clone attempt)
3. Back Shed Bohemian- a czech lager brewed you know where....

couple of weeks til they're ready to drink- updates then!

Hehe.. the hardest part is always being patient isn't it?! What is the best amount of time to leave things bottle conditioning?

...I also have two more batches in the fermenter:
A Leffe Blond clone and a Rochefort 8 clone... loves my belgians.

i (try to) always bottle one from each batch in a plastic (coke) bottle.
Squeeze all the air out when 'capping'
store with rest of beer

then you have a good indication of:
1: how fast they are carbonating
2: when they are carbonated
3: if the plastic bottle is clear, you also get a good idea of how they are clearing out.

i find 4 weeks is when mine start to be really drinkable.
