there are likely plenty of power boards on the market which don't do double pole switching, but still comply to Australian standards.
Also, if you hard wire all the points then 2.4.7 doesnt apply (it usually applies to things like caravans, portable generators and inverters)
If you're looking at electrical equipment from China, an Australian standard tick is unlikely to be high on their requirements list, but theres plenty of other equally applicable standards that may apply.
As the device isn't hard wired, then if you want double pole or wanted to cover yourself for someone replacing wires or an incorrect extension cord, then you can easily design the incoming circuit for the Inkbird controller or any other controller to have a double pole switched inlet circuit. It would always be advantageous to have an isolation switch on the incoming circuit to any brew controller anyway
