Hi all,

Weirdly enough, I find carared doesn't make beer very "red". If you want a very red beer there's another spec malt that's redder I think, but I forget it's name.

Awesome hop combo - it'll be like a tropical fruit salad.

That's true about carared. I have never used it before though so am thinking of correcting the color by steeping some chocolate malt [800ebc]. 30-40 grams should do the trick. beersmith tends to be a little vague on color...

I find a small amount of roast barley in combo with CaraRed works well for colour, and that CaraAroma is pretty red when used correctly too.

Cheers

about 100g of roast makes for red

+1 for the addition of Roast Barley to make red 100g would be spot on for a single batch IMO... around 2% or so. I've done Irish Red just finished, like this;
8.30 kg Pale Malt, Maris Otter (3.0 SRM) Grain 92.22 %
0.25 kg Caramel/Crystal Malt - 40L (40.0 SRM) Grain 2.78 %
0.25 kg Caramel/Crystal Malt -120L (120.0 SRM) Grain 2.78 %
0.20 kg Roasted Barley (300.0 SRM) Grain 2.22 %
90.00 gm Goldings, East Kent [5.00 %] (60 min) Hops 27.2 IBU

Colour was spot on.. nice and red with no Carared at all

Caraaroma, but don't pussy foot around, put in about 300g

Dude looks like a very tasty beverage! I'd say use about 50g Carafa 2 or 3 to get a red colour (instead of chocolate malt) along with the Carared, not too much vienna so will be fine mate. Should lift the IBU's a lil bit if you want a crisp bite to go with all that aroma and flavour ay. 50 IBU would be quite nice :p...but thats all up to you! look forward to hearin how this turns out!

Hey Bribie,
Can you post up that pic of a red you did a while back? I cant find it. You quoted something like "red enough for you?" - maybe it was in what's in the glass, but I cant find it. Recipe too please.
many thanks

xmmm....... i will see if i can get my hands on some carafa special although chocolate is more or less within the same range (doesn't contribute any chocolate flavour that's for sure :p ). As for the IBU's, it does seem more reasonable for an ipa to step it up a bit. 50 could be just about right indeed. :icon_cheers:

Recipe is:
5.5kg MO Pale
0.25 Crystal 40
0.15 Chocolate 450
45kg EKG
1 Pack 1728 Scottish Ale yeast
OG 1048
FG 1015

I went Carabohemian and found that the wort is significantly brown/red colour. I wasn't trying to get a red, but I wanted the Carabohemian flavour, just to try it out, so I ended up with a red ale of sorts, rather than a pale ale. It was going to be a straw coloured hop ale brewed at low temps, but I kinda changed it. The other 4 malts I used were all lighter coloured malts, and I kinda just decided to stick a brown one it, and pretty much stuff the recipe and then though "hey, why not just run with this, and change what I'd planned. I can make another pale ale another time".

Hop profile was Nelson Sauvin (I had some over from the brew I did the same day) for bitter, EKG for bitter and aroma, and stryian and czech saaz for aroma. The smell coming from the airlock is amazing.

Ross at Craftbrewer gave me a try of the nelson sauvin lager he made, whilst I was waiting for my grain to be milled (emergency trip) and I was extremely impressed with the hop flavour and aroma and decided to rejig the above recipe and put it in.

I plan on putting recipe on the DB once I have bottled, aged and tried it.

This is the final version of the recipe that i brewed yesterday evening. I' ll let you know how it came out (looks promising...).Name: Midnight Nelson I.R.A. (India Red Ale

I like the look of it.

I like the tiny bit of Columbus in at the start. I have not been impressed when trying to use NS as a bittering hop in a boisterous beer. It might work well in a crisp lager (though I couldn't find it when I had a single bottle of steinlager pure), but it doesn't seem to support the rest of the hops well. I think you need a loud hop like Columbus or Chinook for that... I have never used Warrior, but there has to be a reason for it being in a certain notorious IPA recipe.
