G'day folks
I would like to produce a Coopers Sparkling Ale, or Pale Ale clone.
Anyone know what the best temp to ferment their yeasts at to produce a brew close to the commercial products??

Also Excactly what hops they use and quantities??

An extract recipe would be great ??

18-20C gives decent results, i believe they use nothing but POR (pride of ringwood) at 60m only. An appropriate extract recipe for CPA would be:

0.5kg Sugar (1kg for CSA)
1 can Cooper's lager (don't use the CPA kit!)

Then either a minimash of 0.5kg Wheat malt and 0.5kg Torrified wheat, or just 1kg of Wheat DME, add 200g of Crystal for CSA

Add POR to about 25IBU (about 5g boiled for 60m would be appropriate), make up to 28-30IBU for CSA

Add 500mL to 1L starter of recultured CPA or CSA yeast, ferment at 18-20C

Prime with malt extract for best results, but priming with plain old white sugar should be fine.

Interesting recipe DJR, i dont mind a Coopers Pale..........i like the addition of a wheat mini mash. Sounds good for taste and head retention. :super:

Will it be ok to boil the coopers kit ? as I have read that a lot of kits are flavoured with Isohops and isohops that are boiled can throw off some off flavours

Easy, if going the minimash option boil the hops with the mash wort, or if using wheat DME dissolve the DME in some water and boil your hops in that, use the can the normal way and top it all up to 23L... That way you're not boiling the kit malt/hops.
