If you had to pick one hop to do all your bittering with, which would it be?
I just realised I have heaps of stock of aroma hops, but not a lot of high AA bittering hops and though I had better get some.
 
I don't have a heap of experience, but I think Northern Brewer is meant to be pretty good like that.
 
Super Alpha is one of the cleanest bittering hops around. I reckon I'd go for something like that.

I'll second that, fantastic hop for clean pale lagers.

Warrior is also good, high alpha, low cohumulone bittering hop. Good value at 16-17% AA

Yep, I made an extract Pale Ale a couple of weeks ago with Warrior as the bittering addition for that exact reason, 90g of that sucker lasts forever. Norethern Brewer is aslo very good IMO
 
Speaking of super high alpha hops, there is a new Australian one on the scene called Topaz. I saw in MHB's newsletter that he has it in stock. Sounds the goods!
