Ginger beer taking ages!

Hi everyone

I'm new to home brewing. I got a Mad Millie ginger beer kit and successfully made a batch to recipe and instructions. It wasn't really to my taste so for my next batch I have created my own after reading a few recipes and watching YouTube clips.

It's been fermenting for almost 5 weeks now and still bubbling multiple times per minute. I haven't got the tool to measure the gravity, I'll have to get that for future batches.

My recipe is roughly:
5 litres water
1kg sugar (half brown, half white)
Couple squeezes of honey
250mls Buderim ginger cordial
Lots of fresh ginger
Cinnamon stick and cloves
1 Jalepeno
1 packet Mad Millie yeast

I'm wondering if this has been fermenting way too long and I've ruined it in some way? 5 weeks seems a long time!! Maybe I have too much sugar in there?

Any advice is appreciated.
