I am about to compile a recipe for a Wit and intend to use Chamomile flowers. Has any one used them, and if so what type (fresh or dried) and what amount. Thanks
 
The only time I've had chamomile is in tea and given that I have not idea why you'd want to put it into perfectly good beer.

Have a read of "Radical Brewing" by Mosher it imparts a "juicyfruit" quality and is a valid ingredient.

I've used 50g of teabags at 1 min to go in a 46L batch, no chill. Nice beer but the chamomile was way too overpowering.

There is a recipe in 'Extreme Brewing' by Calaglione for a 'Wildflower Wheat' as I think he calls it. It's basically 3kg 50/50 wheat/barley extract, 500g honey and chamomile flowers (dried) in the boil. Apparently it's a big hit in his brewery for its relaxing qualities. I think he uses 50g of flowers in the boil but can confirm if you want.

I've got a tin of out-of-date wheat beer kit (Beermasters Bavarian from memory) and was thinking of using this + honey + Saaz + chamomile flowers to use in a *******ised wit (using Wyeast 3944).
