Didn't like putting it straight in at 18C when I'd pitched at 25.

It's probably a good idea to sanitize the fermenter the day before, then half fill with water and refridgerate overnight. Usually I just top up with tap water.

It's a nice healthy WY1056. Only took the bottle out of the fridge 10 mins before pitching. Only made a starter once.

I was a bit worried this morning when there was no sign of life, but I thought "Don't worry. Give it 24 hrs." Well after 24 it looked like well maybe. Water level in airlock a bit cockeyed. 26 hours and she's chugging one off every 5 seconds.

That's the eighth brew from a Wyeast 1056. :)
