Hey Dion, You're gonna have to wait about 2 weeks for it to carb up, once bottled. Try to hold off until then!

Good luck with the Pale Ale.

yeah i know i have to wait... i dont want to though! im also going to keep a bottle from each brew for a few months then crack it to see how it goes

 ! I'm thinking cellaring is not for you some how?

I tried cellaring the problem is hiding beer from yourself never works because you know where you've stashed it! ;)

Good luck with it thou!

hehe.

Keeping buying beer for the next couple of months until you build up a decent reserve.

Or get a second fermenter so you can brew faster than you can drink it. Well, okay, maybe a third of fourth fermenter might be required. ;-)

kinda thinking about getting another one.. i dont rekon its going to last all that long... heh and i thought this was a cheap hobby with a way to drink..

Then get another batch down quick smart!

Keep brewing to get ahead!

If you keg, you can drink it within 24hours... and its a slippery slope by that stage!

It is a cheap hobby. Try boating, skiing, cars, &c, &c. :)

I have only one, um, real fermenter (30L), but I have a couple of HDPE cubes at 25L each. They're a bit small for 23L fermentations, but they're okay usually for 18-19L batches. Quite often if I'm using a kit, I just make it up to 18L instead of 23L anyway. Alternatively, I can rack a 23L brew from the bigger fermenter to either one of the 25L cubes or an 18L brew to one of a couple of 20L cubes (picked up from the back of a cafe - nothing like a good scrounge).

Given that I don't have space for a brewing fridge and therefore cannot brew over the summer[*] I tend to have a couple of brews either in primary or secondary at any one time.

[*]A week ago I discovered Saison. Man, my brewing world is about to change! It looks like people routinely ferment Saisons in the low to mid 20s which means I can probably brew Saison all summer! Yippee!

My problem is I always remember where I stashed it.

personally I have enough self-control, it's my partner i have to hide it from!

I have two and supply is still not meeting demand

I used to have this issue, the key is to brew faster than you can drink, and don't do like I used to brew 3 or 4 batches then stop for a month or so, then brew another 3 or 4.

I'm actually at a point right now that I have 1 in 2ndary, 2 in primary, one cubed, an empty cube I plan to fill next week. I actually have to do a bottle count to ensure I have enough empties before I pitch the one that's cubed. This is a first for me.

Long story short, buy more fermenters.

I try to put on a new batch every weekend, but sometimes my social life gets in the way of brewing. So usually I have one in primary and one in secondary.

Also, HWDMB (He Who Drinks My Beer - I figure the female brewers need an 'equivalent' of SWMBO) has started brewing and that slows down my production line becuase he doesn't like to be confined to strict timelines. Apparently it makes brewing unenjoyable when I nag him to do it at a certain time

 Hahahaha! Wait he till tucks into your AG's now... get a shotgun and big mouse trap!

Cheers

Chappo

I have him trained now to ask which beer he's allowed to restock the fridge with :D

Brew worse beer?

what an outrageous suggestion!
