I would like to make an IPA with NZ hops using the recultured Coopers yeast that I got from the bottles (I already have a Coopers pale ale clone fermenting at the moment so I will use the yeast from that).

I'm planning on around 60-70 IBUs with equal parts Nelson Sauvin and the newly-named Nectaron hops (HORT 4337). Any advice on what this yeast would be like in an IPA? Would I have to mash really low like the Australian sparkling ale clone recipes recommend?
