Been brewing for about a year now, maybe around 20+ brews, all kit beers using kegs and gas. Coopers canadian blonde has been one my favs because of it being very easy to get into session with the lads but myself have started to find it a bit ordinary. For my next attempt at the crazy canuck i was thinking of adding 1.5kg can of Morgans beer enhancer extra pale liquid malt extract while using safale us05 yeast rather than making my regular budget brew. Any feedback on that idea would be taken aboard. Thanks.

I used the CB tins a few times, I always added a kilo of LDME and used s-05.. but I also always added hops- usually to make APA's.

If you wanted to give that a go:

Boil the LDME in about 10L of water and add my hops and boil for 10 mins for an APA or half an hour for an IPA. Usually used Cascade and Amarillo and sometimes a bit of Simcoe in the mix. Also for not much more effort you can steep 200g of crystal in ~70c water for half an hour, remove the grain bag and boil the sweet water and use that water to add the LDME to.. really makes a pretty nice drop.

You can add the tin at flameout and stir it in so it'a all mixed up well, cover the pot with foil and chill in the kitchen sink for twenty minutes/ half hour (changing the water maybe three or four times).

Add this mix to fermentor and top up with water to desired level, usually ~23L for my APAs and 18L for IPAs, usually it's at pitching temp by this stage so you can add yeast (rehydrate or just sprinkle straight in- I rehydrated). Ferment at 18c.

I usually dry hopped as well but up to you, makes a tasty brew either way.

Or if you din't want to go that far by adding grains and boiling hops, I would still recommend using just the two tins and us-05 but dry hop for 3 days at end of ferment (even just 20g of cascade) it will add a little extra to your beer.

I've just done exactly this. Used a Coopers Canadian blonde can. 1kg of ldme and us05 yeast. fermented around the 20c mark. Waited until visible fermentation was over in the air lock. Added 25g of cascade pellets in a hop bag. Let it go another three or four days and tested SG. Bulk primed with dextrose. And I cracked a bottle just shy of two weeks bottled. Should get a little better with a bit more age ( I was really keen to taste this ). And it's now my new favourite. Pretty damn good.

Cheers for the advice guys. Not quite ready to steer towards adding grain yet. I have bought a can of extra pale liquid malt and and us05 for the brew and will ferment in the fridge at 18 degrees. Might try dry hopping but not sure which yet. I have steeped cascade before but tended to be too overpowering. I have had success dry hopping amarillo into a pale style brew before which worked well.

On a second note i have just kegged a brew using a can of Morgans Australian Old with 500g LDME 250g dex 250g maltodex using us05 and 4 weeks in the fermenter at 18 degrees. Was never really a fan of darker beers but this one turned out very easy to drink. Bit more time in the keg will get even better.
