When kumara is called for in a Kiwi recipe - e.g. confit of terrified ewe and kumara mash - would you sub gold sweet potato or the white fleshed sweet potato with the purple skin, or is it different to both those?
 
Not a kiwi but love Kumara. Its the same as the orangey fleshed sweet potato with the orangey/brown skin.
