Mmmmmmmm pickled onions.

My wife..... god bless her........... bought these for me and damn they are nice.

Id love to make my own pickled onions.

Who has some tricks of the trade to share?

i had a few goes at them, dont leave them on rock salt too long, 12 to 24 hours is heaps (otherwise the cells collapse and they get a bit mushy) and make sure you get alot of that salt off. And dont pickle them in straight vinegar, dilute it! i think my favourites were with apple cider vinegar and oregano. bit of sugar helps too..
