Hey all,

Need some advice on recipies to brew for summer.
Had a good look through the forums but cant decide.

I'm chasing a good summer quaffer, I'm a big fan of the corona/sol style. Slam em down fast on a hot day. Looking for some recipe ideas that are reasonably easy, with max 2 hops types.

Any recommendations on your favourite simple summer beers to this style?

Thanks heaps

For a simple and easy to drink summer beer you can't go past wheat beers. Best drunk fresh wish is great as you don't need to store or hold off on drinking them and they are very easy to brew.

Have a look at some wheat recipes in the reipeDB. :)

try looking into Cream Ales, very tasty summer slammer! BYO magazine did a feature on them in the latest issue.

Cheers SJ

For standard 23 liter batch this is a good starting point;

3kg Pilsner malt
500g dextrose
Galena hops to 15IBU's 60 mins

Use s-189 yeast if you can lager, or US-05 if you don't have temp control.

I have done similar in the past and it makes for a pretty bland pale beer similar to Corona.

Have a stab at this: Linky

Make sure you boil for 90 minutes, and you can replace the hop chosen with something else (like Galena - the hop of Corona), if you want something a little less fruity.

But it is a quick quaffer.

My house beer nowadays is Yorkshire Gold, which "evolved" from a standard Yorkshire Bitter - it's a good malty beer with a nice hop hit but, when served cold it really hits the lawnmower spot as well.

Basically Golden Promise to required ABV%
300-500 gm Polenta in mash
Edit: 80g BB caramalt for a bit of a blush

I normally aim for around 5.5%

Challenger hops 60 mins to 35 IBU
Bobek or Aurora 10 mins to total of around 40 IBU

Wyeast 1469 or any competent pom yeast such as Ringwood, ferment coolish under 18% and fine well.

To me it gives the hit of a cold strong lager without having to wait 3 months, and is still a nice quaffer served warmer, with heaps of malt and hop character.

Trying to get a Raspberry Wheat Style beer ready for summer, although it's still in the formulation stage.

Even though its not a beer cider is easy to make and goes down easily on a hot summers day. Just get 20L of juice and add yeast, too easy.

Failing that I'd just get 4kg of pale ale malt, 200g wheat and 100g of med crystal, 18Ibus with POR, mash low and ferment with s-189

Or look up Snows stone and wood clone, that goes down easy too, but then again most beer does :)

1 Pint of soda water.
1 shot of vodka.
1 Shot of an actual beer.

Just yesterday I sampled my latest Corona style after a bit of gardening,

Coopers Cerveza
BE1 1kg
LDM 500gm
Make up to 24litres
12gm Super Alpha boiled for 10mins in 2 litres of wort,
tip all back in
pitch kit yeast, at 18c or less

brew at 15c, let sit for 2 days at steady FG,
add finings and sit 4 days,
bottle with carb drops,

let sit 4-5 weeks,

drink, goes down easier as, tastes good and looks fantastic,

I wish it was hot so I could get all sweated up and drink a belly full....

easy to make and I think possibly the 'nicest' beer I have ever made....and you dont need to fark about with lemon or lime. :icon_cheers:

This summer I'm gonna try a saison (traditional styled lighter alcohol %). I figure with the warmer temperatures I can ferment a couple of these downstairs in the ambient temperature while fermenting two summer ales in the fridge. Mmmmmm, four fermenting batches.

wheat beers for summer, can't beat them IMO. I sometimes freshen mine up a bit with some dry hopping - awesome.

I'd like to have pilsners too but I can't brew pilsners :(
