Hey guys, wondering if I can get any feedback on a recipe I want to try out for a Christmas Ale. I tried quite a few good ones last December and would like to brew something festive to share. I know it's easy to overdo the spices, so I have tried to show some restraint.
I am thinking of bringing down the Galaxy malt a little to bring the abv down to about 7-7.5. The French Saison yeast has never let me down before and seems to produce flavours which just get better with time.
Planning on starting off at around 65c and letting it free rise in a cool area.
Any tips for this year around will be appreciated. Planning to brew in the next few days and age until December.

French Saison Wyeast 3711 80.0%

Ginger Root (Fresh) 1.0 tsp
Coriander Seed 1.0 tsp
Cinnamon Sticks 1.0 each
Nutmeg (Ground) 0.25 tsp
Whole Cloves 2.0 each
Bitter Orange Peel 1.0 each

I am assuming this is a typo. If not what do you mean?

Not a typo. Only with brewing I sometimes mistakenly alternate between metric and imperial.

I normally start this yeast fermenting at about 18c degrees and it takes off very quickly producing quite a lot of heat within a day or 2. So I try to keep it in a coolish room in the dark where it normally peaks at about 25c. For a Saison yeast it's pretty neutral.
