when I exclusively bottled, my beers (often apa's)showed significant improvement with age...a couple of months made a big difference. I don't know the science behind it, but my beer tastes better in kegs. I often force carb and drink within 10mins of kegging (at which point they taste good)...they improve over the next three weeks but then quickly lose a lot of character. ..but its bloody rare a keg lasts this long, so its not often a problem.
