Adding honey into the fermenter

Instead of dry hopping with my standard im thinking of adding a good serving of fresh honey into one of my fermenters.

its a low ibu all grain beer and yeast is US05.

im thinking of adding it once the gravity has dropped to 1.010 when i usually dry hop my others

Any thoughts or suggestions would be great. Even not sure how much to put in and will this fire the yeast right up and put my alcohol limit really high?

what to do?

it will kick up the yeast again so id add a little earlier around 1020 or so then dry hop as normal.
 
prime with honey then.
or use a strong flavoured honey to begin with.
 
thanks barls ill give it a go. any idea on how much for a 750ml longneck and also does this mean drop out the late addition in the fermenter

you can do both.
if you want to prime go about 7g/L for about 2.5 vols of co2
