Hey Guys,
I am going to make Neil's Centrillo Ale,

2 x 1.5kg Coopers LME tins (pale)
500g Dextrose
20g Centennial @ 30 min
40g Amarillo @ 20 min
40g Amarillo @ 10 min

Total 31 IBU

OG 1058

Pitch Nottingham (would probably work well with US-05 too) and keep the temps under 20 degrees.

FG 1013

I will put this on top of a us-05 yeast cake in a willow 20 ltr jerry can.I think they hold a bit more than that.
What I want to do is make this up to 15 or so litres and start ferment then after a couple of days when ferment has slowed a bit, add boiled cooled water to fill the jerry can.
Reason for this is to avoid krausen spewing all over my fridge, which happened before.
Anybody see anything wrong with this?
Got some spare carapils so might add 200 gm ,just for fun.
Cheers,
wombil.

If you don't want krausen pissing out everywhere, don't pitch directly onto a yeast cake.
1/2 a cup of the slurry will be more than enough.
