I'm doing a 44L IPA tomorrow, should be around 1.055.. and just realised I only have one pack of US05.

I know using just one pack will be a significant underpitch..

Should I make up a starter tonight, maybe around 3L, and pitch the pack on that? Hopefully will be enough yeast by tomorrow.

Any danger "overpitching" the starter?

Do you no chill? If you are doing two cubes then you can use the German Drauflassen method of starting the ferm on half the beer then when that's firing, add the rest of the wort.

I like that Drauflassen method too. Works great and saves stuffing around building up the yeast with starters.

Otherwise a quick check on MrMalty http://www.mrmalty.com/calc/calc.html recommends ~ 2.5 packets at ~ 78% viability by estimated age 6months since package date.. YMMV.

So a very good starter, 2 -3 lt will do it but then that increases your batch size. Unless you wait longer, settle the yeast and tip off the brew and just use the thick slurry etc.
