what malts go good in a ginger beer

which malts and hops go good in an all grain ginger beer>? any suggestions?

Something citrus/lemon for hops.....

Caraaroma for some raison/blackcurrent

I'm not yet a ginger beer brewer but I think of gingernuts, or the beautiful dark gingerbread we made when I was a pastry chef. Maybe Munich, some biscuit, a bit of Special B for dark background flavors, some golden naked oats for some fruitiness...just ideas. I've never seen a dark ginger beer but I'm sure it's been done and could be very nice.
