I've been reading Randy Mosher's 'Radical Brewing' recently, and he talks about a portlike beer, high in alcohol, high final gravity, and fermented using a sherry yeast. I'd be interested in doing something similar, and had a few questions...
1. Does anyone know where to get sherry yeast in Australia? I see Craftbrewer has WY3278 Lambic Blend which contains sherry yeast along with Brett and Lactic acid blends, but I'm unsure whether this would be right.
