Out of curiosity, did you pitch at 15c with one or two packets of S-23?

The pilsner malt should be mashed (eg. held at 67C for 60mins) for starch conversion and 100g is not really worth the effort. Steeping pilsner malt, or any other base malt, will not yield much in the way of fermentables, maybe a little bit of haze. Steeping is fine for crystals such as caramunich.

Should be fine to drink, but you might need to do some more research on mashing v steeping.

If your thinking of doing one of these, I would go for two packets of yeast and pitch at the fermentation temp. I would be aiming for around 12 Deg.C. Maybe lower but not higher.
