I put a Chris' British Ale (recommended in my last thread) in the fermenter yesterday and Krausen has already started. Then I checked the dates. I like to leave the wort to ferment for 14 days but have miscalculated as I fly out to Perth for a two week trip on the 14th day. If the wort is ready before then I'm not even sure that I will have the time to keg it anyway. But it's my first option.

What I'm asking is if I don't have time, can I leave the wort in the fermenter for an extra two weeks and at what temperature?

Can you cold crash it in a fridge?
If you can’t cold crash it, I’d probably just keg it and leave it warm and treat the keg as a secondary fermenter.

Yes, I can cold crash it in the freezer I use as my fermentation chamber.
