Temperature Controller Installation

Hi All,
Have picked up an old fridge to convert into a fermenting fridge (much needed right now).
Have intentions of purchasing a temperature controller from evilbay, an stc1000 or similar.
Most of the searches on this site wire them in a box and patch between the wall socket and the fridge power plug.
This turns the fridge on and off as if it was being switch on and off at the power point, I thought this is not good for a fridge.
Would it be better off wiring it in to replace the original thermostat?
Has any one done this or has any advice on this method??
Any ideas?
YES I do know the perils and dangers of 240V as I do have experience working with it.

If your fridge has the old style dial thermostat you may just be able to pull it out and stick in a new dial and bulb. I found this old picture of mine, it was a pretty cheap solution, required no skills to install and keeps a very good temp.

Can someone here please confirm that this will probably work? I was thinking of building a little box to behave like a temperature controller that I would reuse on another fridge if need be.

Basic parts are

And on top of the box have two power points (one for hot and one for cold)

Then have a plug for plugging in the temperature gauge

Wired up there is no reason that shouldn't work and be portable?

You may just want to check the size of the box and the size of those power points and think how you are going to mount them and the STC and the prob and the power and include all wiring. I am not sure but I am thinking that may be the power point might be too big????....

Absolutely the box is probably the wrong size in the link I gave but I will definitely check all of that instore. Also will definitely do the IEC power socket too.

How do most of you install these units?

Directly into the fridge/freezer itself?

Will take pics and maybe post up a howto guide. Or is that probably not a good idea incase someone zaps themselves with 240v?
