Dogfish Head did a chicha brew a few years back and documented it on their tv show.

It's always quite fascinating to read some of the methods used to create beers from thousands of years ago.
 
I know chicha. My folks spend a few years in Peru back in the 70s and had chicha there. Dogfish used the polite (and less disgusting) version of traditional chicha. Sometimes its made by moistening the grain with saliva and drying into cakes which are then soaked in water a few days later. Sometimes though its fully chewed then the soggy mass spat into a bowl and left to ferment.

And unlike dogfish head's, real chicha is never boiled. Just chewed and fermented.

You may be thinking of DFH's Midas Touch. Having had it I can't say it's a "beer" I'd want to replicate.
