Keg is probably slightly less sanitary simply because you're dispensing from our multiple times. But in terms of filling it, be sure to invert it to let it heat pressurise the top as well and personally I'd flush it with co2 and pressurise to about 40psi before cooling both to seal the lid and to stop it going to vacuum as it cooled.

I do this when I no chill into a 26L fermenting keg. Be very careful pressurising near boiling wort though.
