Hey all,
I finally caught a trout after a few months of trying. I got the old smoker out and here is the result.

About a 2 pound brown trout

Making the Brine, basic brown sugar and salt I added some chilli and garlic for a little extra. kept in brine in fridge for 36hrs

Smoked with Apple timber for 25min.

I think it could have done with a tiny bit longer it wasn't raw but very very moist. I supose it would depend on how you were going to eat it.
Too moist to flake through a salad but just to pick and eat it was fine. Smoke flavour was there but not over powering.
I seem to have broken the drought on the fish too I got another one yesterday similar size however my girl friend lost a BIG one must have been 6-8 pounds.

Honestly I cant remember what beer I had if any but tonights smoked trout will be enjoyed with a Mountain Goat Hightail Ale followed by a Holgate Temptress chocolate porter.
