Safale Us-05 Attenuating More Than Expected

Hoping to get some advice. My last four brews of a Dr Sumuto GA (not exact recipe) have been attenuating to about 1.007 or 1.008. Beersmith tells me i should be hitting 1.012 or 1.013. There obviously is less body than i am used to for the Dr's GA. The beer is still good but just a little little bit light. It has only started happeningsince i have been using a tempmate.

My mash temp is 66c. I measured my OG at 1.049. Strange, so unless i am miscalculating i should be getting a higher FG. The yeast i use is from craft brewer, the dried stuff they package up.

Any thing i am missing???????

US-05 is a very good attenuator and will get down to 1.008 no worries at all. Thats only 83% attenuation and i have had it get into the low 90's with a low mash temp.

Perfectly normal.
 
I have had my last few US05 brews finish quite low.
I just had DRs GA finish at 1007 from 1045.
 
OK so this normal or at least not odd.

Might play around with with some carapils and see if that extra mouth feel is something i want or just rose tinted glasses.
 
I stuffed up on a temp once and mashed in at 62. I thought..... let it ride and see how she goes.

Went from 1.048 to 1.002 with US-05

beer was great too
 
try using wyeast 1272 American ale 2

Its got a bit more character and wont dry the beer out as much.... if thats what your after.

Have you checked your hydrometer? Have you checked your mash thermometer?
 
try using wyeast 1272 American ale 2

Its got a bit more character and wont dry the beer out as much.... if thats what your after.

I've only used it a few times but I agree with Tony that it's not as neutral as 1056/US05. The manufacturer states that it flocculates better than 1056. I didn't find this to be the case but this may have had something to do with me rather than the yeast. I'd be interested to hear other people's experiences with this yeast.
 
mmmmm more floculant........... i dont know, i have never really been able to pick the difference. I do love the slightly sweet nutty character it lends to the beer though.

As for clearer beer......... they all look the same to me as i filter direct from primary :)
