Russian River Hopfather Double IPA clone

Hi Guys, just need a more experienced brewer to cast their eye over this recipe.

It's taken from the book 'Extreme Brewing' by the dogfish head guys. The recipe in the book says I should be hitting
SG1.066 to 1.069 with a target of 7 to 7.5% and 100 IBU's

but beersmith is predicting 137IBU's at 7.8% 1.077SG which seems a bit off. What have i done wrong? should i just bring the dry malt and bittering hops down a touch ?

also another quick question, think it would be acceptible to replace Magnum with Galaxy for bittering?
 
Your IBUs could be off because of the formula being used by beersmith, you're not going to notice any difference being that bitter anyway. I think they say 100ibus is the limit of what you can taste also. Stick with magnum, galaxy is harsh as a bittering hop.

Also your efficiency could be set differently to the recipe which is why your OG could be higher, or its just an ingredients thing in beersmith.
 
I just checked the website for russian river and they say it has Northern Brewer for bittering and Amarillo and centennial dry hopped......so not sure that recipe you have found will make the beer your titled the thread for.

I know the current commercial recipe is different from the one given in the book, i just want a nice hoppy double IPA and this sounds like the ticket. The book recipe is straight from Vinnie at Russian River so i know its going to be decent.

in regards to magnum, couldnt get any at my local supplier, i was worried about using galaxy for bittering as i had heard that, but ive also heard it doesn't matter what you use for bittering so was a bit confused.

in lieu of magnum, would either more columbus or centennial work in it's place?
