Brewer's Notes

Mashed at 66oC for 80 minutes, 68oC for 10 minutes. Bulked primed with 120 gms sugar. The 50 min hop additions are FWH. The FG was 1.012 giving 5.9% alcohol in the bottle. I really like this beer but people who don't liked smoke really find it too much for them. I don't really condition the beers, just let them carbonate in the bottle in a cool dark place. Was 1st, Gold, 82/100, Specialty Class, Bitter and Twisted Comp 2007.
