Brewer's Notes

crystal hops are citra, mash @ 65 degrees 60 mins mashout 76 degrees, yeast is wy2252 rasenmaher (lawnmower) 2 litre starter 14 days primary @ 13 degrees, kegged and drinking after 2 weeks @ 3 degrees, fantastic beer that anyone would love, definitely one of the best beers i have made

I rate citra highly after doing this beer with citra.

Was recommended by the site sponsors to use it as a substitute for another they didn't have in stock.

Another hop I rate really highly, and is somewhat similar in nature is Nelson Sauvin. Used it in this beer to good effect..

I'm really liking these fruity american hops. Amarillo is another good one, though I think that citra and NS have that "wow" factor that some of the others don't.
 

plenty of hops, especially late

this yeast strain is really nice, its created a silky smooth feel to the beer,

having made beers with similar grain bills and hop schedules, but using ale yeasts, i can definitely say that this has a velvet feel that has balanced the malt and hops perfectly

citra i find very similar to galaxy, in fact if you switched the labels on the hop packets, i'd be none the wiser

i find nelson sauvin very different, and i must say i cant stand it, its the only hop i can honestly say i hate

its the yeast that has made this beer fantastic,

best described as "an angel just ate a passionfruit flavoured mars bar and is now breathing into your mouth"
 
How did the yeast perform DB? I've just picked some up yesterday.


very very neutral yeast, no esters, no sulfur, the hop aroma has remained but i can still taste malt

1.048 down to 1.013 which i thought wasnt bad considering my grain bill

i would describe the mouthfeel as silky

make sure you keep some for a future brew, you'll definitely want to use it again

I can understand that. I think NS is one of those hops that could be very unforgiving if one does make a slight error.

I probably got lucky with it and formulated a recipe with it correctly. Because it was a joint brew (shared costs), with something that doesn't like high IBU beer, I dropped the IBU down by about 15 points, and I think that it is the key for NS. Drop the points far lower than normal taste. And I think one needs to be conservative with the BU:GU ratio. I had an OG of 1.049 (FG 1.002) and IBU of about 25 (according to qbrew).

I ended up with what was virtually a barley wine. It was very wine-like in terms of its flavours. Not at all the traditional malt beverage.

Ross at Craftbrewer (i occasionally drop in) does a mean Nelson sauvin. His tends to lots of initial bitterness and late aroma. Still has that gooseberry grape aroma and thinner mouthfeel, which suits ther beer.

I've never tried Galaxy. We almost went galaxy instead of NS, it was a toss of the coin. The beer would have been different.

Given its not a lager so maybe a little off topic and I haven't tried a Galaxy as a lager but.....

I have a Galaxy brew with 35gms dry hopped citra brewed to 60IBU of Galaxy . Seems to work well together. Mellowing and blending now after more than a month in the bottle.
For me the citra on its own lacks something, but a good hop all the same. When mixed with other fruity/citrus hops its good.
Taking samples to swap meet so will gather others opinion and report.
I would expect citra with any of the big apa hops will add another dimension.

i have also made it with chinook and cascade, and wound back the crystal malts to only 3%

chinook 30g @ 15 and 30g @ 5, and casdcade 35g @ flameout

i'll say it again, this yeast works really well in this style of beer, and i am planning to try it in a european style lager, using noble hops just for bittering
 
Yep, a great yeast. I've scavenged a cup full and stepped it up on the stirplate to pitch into a Vienna next week.

Just drinking a variation of this beer, similar grain bill, same yeast but using D Saaz, and might i just say its fantastic

the riwaka hop has a beautiful mandarin and grapefruit flavour, and this reduced hopping schedule suits the slightly less malty background, harmonious, and lighter in intensity than the citra lager, a quaffer thats for sure

Looks very nice donburke. The Vienna has come up a treat and I've just kegged a second batch of a SMASH Citra lager variation (pils actually) my favourite use of this yeast to date.

care to share the mashing and hopping schedule of the smash citra ? which pils did you use ? OG ?
 
No probs, just had to switch to the PC, I did use some wheat malt, so technically not a SMASH.
