Brewer's Notes

Use Muntons DME and Muntons wheat DME. Also use genuine wheat yeast in liquid form to get the right profile. This actually won a BoS trophy at a local comp.

Can get away with a 7 litre boil, using the wheat DME and the hops for 60 min, then add the remaining malt for the last 5 min. Top up to volume in the fermentor, after cooling the kettle/pot in the sink. Ferment at around 20° (cooler or warmer depending on the profile you want).

I am going to give that one a go.

My last one was:
1.2 kg of Muntons Wheat DME
1.5 kg of Coopers Wheat LME
300g Carawheat
Hallertau to 15 IBU
Wyeast 3068

Turned out quite nice even though a touch darker than true to the style.
Also I did a ferment at 18C and for my taste not enough esters with that yeast.
Next time definitly the 20C!
