Cracked them open today - crisp texture and good pickled flavour, hint of the spices and chilli
Next will add more chilli but otherwise happy with outcome
 
Made a batch today.

3kg onions coated with salt and left overnight.

The finished product - large jar is cider vinegar with chilli and spice, the other two are cider vinegar with spice but no chilli and malt vinegar (the dark one) with spice.

I'll let you know how they are in 2 months time...
