I have come across a kit dated Used by Oct 06.

Will this be any good to use? I realise the hop flavours will be no longer be there, but just as a base malt tin, that I can add hops to. I guess the main question is will the malt be off or is the dat just for the hops?

My understanding is that the extract itself goes a bit stale over time and is what causes the oft spoken of extract-twang. Although maybe itll be fine if you use some fresher malt in the fermentables and a nice big dose of hops.

AND OF COURSE YOU WILL MAKE SURE YOU USE SOME FRESH YEAST!

Lots of people use out of date kits, but then again lots of people smoke....

As the tins age, the extract oxidises and darkens. It may acquire sherry-like character or worse. Also what tends to happen is the kit never ferments out fully, so you end up with a chestnut -coloured sherry-like brew with a really sickly-sweet aftertaste. You wouldl do well to drink more than a couple of glasses of it without feeling sick.

I wouldn't use it personally
