First all extract brew, and it didn't go so well.

A few small errors that could have been avoided.

1. Forgot to get brown sugar, so I used dextrose instead. OK, won't hurt.

2. Forgot to get ice, and had to run over to the supermarket while the pot was sitting in the laundry sink. OK, still got it cooled in less than half an hour.

3. Forgot to aerate the starter wort, and the yeast didn't actually start anything before I pitched it. Hmm, not so good.
4. I was thinking OG=1070 would be nice, but got 1098. I'm really worried about that yeast now. :(

I used 2 pkts Coopers heritage ale yeast. As I said, didn't get started, just re-hydrated.

Think I'll call it Old Knucklehead ale.

Hope I haven't wasted a bottle of maple syrup.
 
What was your recipe and your final volume?

Half an hour on cool down is no huge biggie. Just rehydrating your yeast is fine, and aerating is no so important when using dried yeast.
