Hi all

Here is my Saison recipe I plan to put down next weekend:

1 x Thomas Coopers Wheat Beer Kit
500g of Light dry malt extract
800g dextrose
45g East Kent Goldings (10 minute boil with malt)
45g Styrian Goldings (30 second boil with malt and EKG)
Wyeast 3711PC (French Saison)
Make to 23 litres
Primary ferment at 23-25 degrees
Bottle Condition at 23-25 degrees

I like Docs Spice mix in my Saison

Coriander
Seeds Paradise
Chamomile from teabags

just in case you dont hit the warmer temps with the yeast .

The spice should not be overpowering have not got the amounts with me at work
 
Hi all

Well I put it down and it is bubbling along nicely at 25 deg.

The problem is, I did not stir the wort properly and my OG reading is all crap (1.088) because all the dense stuff was at the bottom of the drum.

Can anybody help me with this or forward me a link to a useful calculator?

My Saison is ready to bottle. FG 1.008

Fermented at 25-27 degrees, smells and tastes bloody fantastic, nice golden colour. Interesting thing is that it is not really cloudy as a wheat beer is supposed to be.

I will bottle it on monday night, any problems with leaving it till then?

It'll be fine untl then. I love this French Saison yeast. Not as spicy as the Dupont strain but sooooooooooo much quicker. I subed the dex with honey for some extra complexity and I'm dying to bottle it. Was gonna do it tonight but was too stuffed after too many late nights. I'll probably do it Monday night too!
 
Here is my Saison after 1 week in the bottle. No head but it was not very cold if that makes any difference. Tastes great, you can detect the fruity flavours and silky mouth feel.
