Just tried this calibration brew from Still water from the U.S and the Mornington Brewery this afternoon. Bloody fantastic, if you are in the area get down to the Mornington brewery and try it for your self could have stayed there all arvo if I wasn't bloody driving. Next brew will be a saison for sure.

Which yeast you going with? How do you intend to keep it warm during a Melbourne Winter?
 
If by native pepper they mean Mountain Pepper (Tasmannia Laneolata) then they missed the boat by about 2 years :D
Been making a saison every summer using those little suckers
58% wheat
39% pale
3% acid
1.050og 1.008fg
25ibu
14gm pepper berry
wyeast 3726

Yeast is an absolute workhorse and loves the higher temps and the pepper would go well in a couple other styles.
