I picked up a bag of Weyermans premium pils malt and was was going to try my hand at a pils or simple SMASH with some Motueka flowers

As I havent tried a pils yet thought I would ask for others opinions.
I also have a packet of S23 in the fridge so the recipe would look something like the following with the SMaSH being without the 2 grain additions
Morning After Pils (German Pilsner (Pils))

Original Gravity (OG): 1.047 (°P): 11.7
Final Gravity (FG): 1.012 (°P): 3.1
Alcohol (ABV): 4.62 %
Colour (SRM): 4.9 (EBC): 9.7
Bitterness (IBU): 31.2 (Average - No Chill Adjusted)

92.59% Pilsner
3.7% Caramunich I
3.7% Carapils (Dextrine)

0.7 g/L B Saaz (6.8% Alpha) @ 60 Minutes (Boil)
0.5 g/L B Saaz (6.8% Alpha) @ 45 Minutes (Boil)
0.7 g/L B Saaz (6.8% Alpha) @ 15 Minutes (Boil)


Single step Infusion at 66°C for 60 Minutes. Boil for 60 Minutes

Fermented at 12°C with Saflager S-23
 
Looks good but i would ditch the spec malts and go 100% pils

Wyeast 2278 is also one of my favs, I have only used S-23 once (and once only)

Leave in fermenter for 4 weeks, then lager for another 4.
 
I am considering something like this for a north german pils, Jever style

40l batch

7kg weyermann pilsner

62c for 60min
72c for 15 min
Sparge at 78c

Boil: 90 min
Hallertauer Tradition: 40 g, 7aa, 85 min
Hallertauer Tradition: 40 g, 7aa, 55 min
Hallertauer Tradition: 40 g, 7aa, 25 min
Hallertauer Tradition: 40 g, 7aa, 5min

Wyeast bohemian pilsner, 2l --> 5l 2step starter

Any feedback?
