So back from munich and opened the weizenbock I made before we left. I taste "OK" when we left but now it tastes and smells strongly and revoltingly of molasses! How did that get in there?

pilsner, wheat malt, munich II, caraaroma, crystal, chocolate malt.
Wheat extract.
hallertauer
wyeast 3068

How does that make molasses?

Aren't weizenbocks a long term proposition? I thought 6 months...

cheers

I've got some old weizenbocks (2 years+ old) that have developed an 'oxidised' metallic note that is remanisant of sherry or port...not as intense as molasses though! Seems like the flavour of amber/caramalts without the sweetness.
How old is this beer of yours?

How much Caraaroma and Crystal? (and what brand?)
